Happy Holidays!  When the scent of  cookies baking in the oven fills the air, it brings such a warm feeling into the home and into the heart.  It's true how scents can remind us of childhood, especially at Christmas.  I remember baking cookies with my Memaw, Grandma and Mom.  I still use my Memaw's recipe for Sugar Cookies and think of her every time. 

Listed are some recipes that you have contributed and would like to share with others. Many of these recipes have a special place in your heart and home and I thank you for sharing them with us!  I hope that  on this page, you will make new traditions for your family and that one day, your grown children will remember that delicious scent and feel young again. 

 

 

This recipe is quick, easy and delicious...especially in the fall and winter.

Microwave Apple Crisp
Serves 4 - 6

Slice about 6 cups of apples into a 8" square glass dish (as metal can't go in the microwave). You don't have to measure the apples just make a nice pile in the dish as high as you want. Remember they will cook down somewhat.

Sprinkle apples with 3/4 cup of brown sugar and mix around.

In a separate bowl mix with pastry blender until crumbly:

1/2 cup flour
1/3 cup brown sugar
1/3 cup oatmeal
1/4 cup of cold, cubed butter
1/2 tsp cinnamon

Spoon mixture on top of the apples and microwave for 9 - 12 minutes on high. Let stand for a few minutes and then eat warm. Great with ice cream too.

You can have this prepared and just start the microwave half way though dinner and then dessert is done when you are ready for it.

I made these cookies for someone as a little "thank you". Needless to say, they should be thankful it left our house because these cookies are DELICIOUS! Perfect for Christmas or anytime.

Magic Peanut Butter Middles

1/2 cup butter, softened
1/4 cup creamy peanut butter
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 cup cocoa
3/4 cup creamy peanut butter
3/4 cup sifted powdered sugar
Sugar


Beat butter and 1/4 cup peanut butter at medium speed with an electric mixer until creamy; gradually add 1/2 cup sugar and brown sugar, beating well. Add egg and vanilla; beat well. Combine flour, baking soda, and cocoa; gradually add to butter mixture, beating well. Set aside.

Combine 3/4 cup peanut butter and powdered sugar, beating until blended. Shape mixture into 30 (1-inch) balls with floured hands.

Shape about 1 tablespoon chocolate mixture around each peanut butter ball. Place 2 inches apart on ungreased baking sheets. Dip a flat-bottomed glass in additional sugar, and flatten each ball into a 1 1/2-inch circle. Bake at 300 for 10 to 12 minutes (cookies will be soft). Cool slightly on baking sheets; remove to wire racks to cool.

Makes about 2 1/2 dozen

 

 

Jason's Peanut Butter Kandy Cake Recipe

Jason asks me to make these for him for special occasions...they are his favorite. They smell just
yummy while baking too.

4 eggs
2 cups sugar
1 tsp vanilla
2 cups flour
1 tsp baking powder
1 cup milk
2 Tbsp butter
1 1/2 cup peanut butter
8 oz chocolate chips

Heat oven to 350

Beat eggs, sugar and vanilla until smooth. Blend in flour and baking powder and set aside.

Heat milk and butter on low heat until hot.

SLOWLY pour into batter until blended--batter will be thin.

Pour into a greased jelly roll pan or cookie sheet with rim (11 x 17 x 3/4)

Bake 15 minutes

Spread peanut butter on the hot cake and let cool for 1 hour or until peanut butter is firm (you can put it into the refrigerator to speed up the process).

Melt the chocolate chips and then spread over top of the peanut butter. Let the chocolate harden and then cut and eat.

What's Christmas without Gingerbread Men?


Gingerbread Men and Women

1 cup shortening
1 cup sugar
1 egg
1 cup molasses
2 tablespoons vinegar
5 cups sifted all-purpose flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3 teaspoons ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Cream shortening and sugar. Beat in egg, molasses and vinegar. Sift together dry ingredients and blend into creamed mixture. Chill for 3 hours. Roll dough on lightly floured surface to 1/8 inch thick. Cut into gingerbread boy or girl shapes. Place 1 inch apart on cookie sheet. Bake at 375 degrees Fahrenheit for 5 to 6 minutes. Cool slightly on cookie sheet then remove to cooling rack. Makes about 5 dozen. Then decorate to make your gingerbread men and women unique!

 

 

Aunt Joan's Great Cheerio Mix

(My Aunt makes this each Christmas. It's so good that it's hard to put down once you start eating it!)

1 Cup Brown Sugar
1/2 Cup Softened Butter (1 Stick)
1/4 Cup Light Karo Corn Syrup
1/2 tsp Salt
1/2 tsp Baking Soda
6 Cups Cheerios
1 Cup Cocktail Peanuts
1/2 Cup Raisins (Optional)

Preheat Oven to 250

First 2 Steps are VERY important. If you do not grease the cookie sheet and bowl you won't be able to get the mix off them. If you forget to measure out the ingredients until after caramel is ready, it will be too sticky to work with.

STEP 1: Grease Large Cookie Sheet with Sides

STEP 2: Measure out Cheerios & Peanuts (and raisins if you are using them) into bowl and mix well

Heat Sugar, butter, syrup and salt on medium heat stirring constantly until bubbly around the edges
Cook additional 2 minutes stirring occasionally
Stir in the baking soda until foamy and light in color
Pour over the other ingredients immediately and stir until well coated
Spoon onto cookie sheet and flatten and spread it out

Bake for 15 minutes

Stir mix around on the pan and then let it cool. After the mix cools loosen from the pan. Let it stand for 30 minutes and then break into pieces.

Here is a GREAT gift idea for everyone on your list. These are especially nice gifts for teachers, bus drivers and such.  Cookies in a jar.

Vanilla & Chocolate Chip Cookie Mix:
1/3 C. milk chocolate chips
1/3 C. Vanilla chips
3/4 C. semi-sweet chocolate chips
2 C. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 C. sugar

Layer the ingredients in the order given into a wide-mouth 1-quart canning jar. Pack each layer in place before adding the next ingredient.
Attach a gift tag with the mixing and baking directions (See below). *A half-yard of fabric should
make 8 jar covers*
**Baking Directions:**
Vanilla & Chocolate Chip Cookies
Makes 3-4 dozen cookies
1 jar Vanilla & Chocolate Chip Cookie Mix
3/4 C. butter or margarine, softened
2 eggs, slightly beaten
1 tsp. vanilla
Preheat over to 350 degrees. In a large bowl, cream the butter, eggs, and vanilla. Add the Mix and
stir until the mixture is well blended. Drop by rounded tablespoonfuls onto greased cookie sheet.
Bake for 15-18 minutes. Transfer to wire racks to cool.

Here's another one that is really good and it's inexpensive to make. It uses ingredients you already have in your kitchen.

Snickerdoodle Cookie Mix:
2 3/4 C. all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
2 tsp. cream of tarter
1/2 tsp. cinnamon
1 1/2 C. sugar

Layer the ingredients in the order given into a wide-mouth 1-quart canning jar. Pack each layer in place before adding the next ingredient.
Attach a gift tag with the mixing and baking instructions.
Baking Instructions:
Snickerdoodles
Makes 4 to 5 dozen cookies
1 jar Snickerdoodle Cookie Mix
1 C. butter or margarine, softened
2 eggs, slightly beaten
1/2 C. sugar
1 Tablespoon cinnamon
Preheat oven to 375 degrees. In a large bowl, cream the butter until light, add the eggs and beat until the mixture is smooth. Add the Mix and continue to beat until the dough begins to form. Combine the sugar and cinnamon in a small bowl. Shape the dough into 1-inch balls and roll in the
cinnamon-sugar.Arrange on ungreased cookie sheet and bake for 10-15 minutes or until light tan.
Transfer to wire racks to cool.

**A half-yard of fabric should cover 8 wide-mouth canning jars**
**Cut fabric into 8" squares (or 9" diameter circles). Place on top of the jar lid and screw down
the jar ring to hold fabric in place. Or place fabric over whole top and use ribbon, raffia, twine,
yarn, lace or string to hold into place (Use rubber band to hold material in place)
**These will keep for up to 6 months**

Oatmeal Scotchies

Preheat Oven to 375
 
1 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
2 sticks soft butter
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
3 cups quick oats
11 oz pkg of butterscotch morsels
 
Combine flour, baking soda, salt and cinnamon
 
Beat butter, sugars, eggs, vanilla in large bowl.  Gradually beat in the flour mixture.  Stir in oats and morsels.
 
Bake for 7 - 8 minutes
