
After all the trouble you go to, you get about as much
actual "food" out of eating an artichoke as you would

Funnel Cakes
1 cup all-purpose flour
2 teaspoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 large or medium-size egg, lightly beaten
3/4 cup milk
vegetable oil for frying
confectioners sugar
In a large bowl combine the flour, sugar, baking powder and salt. Gradually add in the beaten egg and
milk until well blended. Let the mixture stand for 15 minutes. Heat 1/3 inch of the vegetable oil in
a deep skillet to 390 degrees. When the oil is hot, pour the batter into funnel, drizzling a thin
stream of batter into the hot oil. Start in the center of the skillet, circling continuously until pan
is filled or the cake is desired size. Do not stop pouring until the cake is complete. Fry on each
side until golden brown. Drain on paper towels and serve warm with confectioners sugar sprinkled over
top or on side for dipping.
